Glycol At Nobu
Refrigeration plays an important food safety role in any restaurant kitchen. But Nobu in Park Lane, one of the world's great restaurants, has more than 30 species of fish and shelfish on the menu on any one day and most dishes are served with the fish raw - so effective refrigeration is the number one priority.
Even more so since, when chefs are opening and closing fridges constantly, it plays havoc with temperature management. Temperatures creep upwards throughout the day and conventional refrigeration just cannot pull it down again before the next chef opens the next door.

Nobu is at the five star Metropolitan Hotel on London's fashionable Park Lane. Japanese in style, and widely regarded as among the most celebrated and exciting venues in London, it was recently declared by Restaurant Magazine to be one of the world's 50 best restaurants.
Now Nobu is using the new Williams Glycol system, and its rapid temperature pull down system and reliable temperature control has made a significant contribution to its business.
Sushi and sashimi are hugely popular, both in the main restaurant and in the smaller sushi bar, and of the 30 items on this impressive menu, most include raw fish.

Mark Edwards, executive chef at Nobu, says absolute freshness of the ingredients and complete confidence in the refrigeration are the cornerstones of working with and serving so much raw fish.
Says Mark: "The effectiveness of our refrigeration is crucial to our success. We get fish in fresh every day, most of it direct from Fungis market in Paris. The fish we use is extremely expensive to buy and we have a world class reputation to protect. When we fill a fridge overnight with hundreds of pounds worth of top quality seafood, it's vital to come in the next morning and be reassured that it's in perfect condition."
Last year Mark decided to replace all the refrigeration at Nobu. Instead of shopping around different refrigeration manufacturers, he went direct to Williams Refrigeration, a brand he says is the best and most reliable he has ever worked with.

He began the conversation with Williams by talking about how many conventional cabinets he would need for the refrigeration refurbishment. However, very quickly into the discussion Williams introduced him to its unique Glycol system of remote connected refrigeration and he was hooked.
The system gets its name from the type of refrigerant used, Glycol. As a refrigerant, it is extremely eco friendly. It is food safe with no health risks to users and installers and there is little or no heat emission into the kitchen, reducing ventilation and air conditioning costs. And with outstanding rapid temperature pull down times, the system is significantly faster than any other system available.
Another key benefit of Glycol is its energy efficiency, with up to 25% reduction in running costs. These savings come mainly through the unique way the refrigerant reaches the refrigeration cabinets. Traditionally, every refrigeration unit comes with its own compressor, which reduces available cabinet space. This brings with it increased capital costs and service costs of a compressor in every unit.
The Williams Glycol system has a central compressor unit, which feeds each refrigeration unit with refrigerant through in interlinked plumbing system. With one compressor serving a bank of cabinets, the energy savings are substantial.

The Williams Glycol system selected by Nobu is a 100% backup system which uses two linked compressor units. The control system automatically switches alternately from one compressor to the other every 24 hours and in the unlikely event of a fault detected through the internal diagnostic system, the compressors stop switching until the fault is remedied. And with two compressors serving a bank of refrigeration equipment, each unit can share the workload therefore reducing the amount of stress per unit and ensuring maintenance costs are reduced to an absolute minimum.

The energy saving of the Williams Glycol system is extremely important to Nobu's bottom line, and its sheer speed and efficiency is a great benefit. But Mark Edwards says its reliability is also an incredible reassurance.
